Criollo Cacao from Pangoa – A treasure from Peru

This premium-quality cacao is grown in the Satipo province, at the edge of the vast Amazonian plain in Peru. It thrives at an altitude of 700 to 1000 meters.

This exceptional cacao boasts subtle aromas and stands out for:
A natural sweetness – Less bitter than other varieties, it reveals delicate notes of dried fruits, honey, and spices.
A low tannin content – Giving it a silky texture and a refined taste.
Nutritional richness – High in antioxidants, magnesium, and theobromine, it is known for its energizing benefits and heart-opening effects.

It is raw and cultivated ethically and sustainably by wonderful people.

Every step of the production process is carried out with great care. The cooperative it comes from is one of the last in Peru (and even in all of Latin America) to grow and protect this variety, ensuring that hybrid strains are not introduced into local plantations.

From Bean to Paste

Inside the cacao pod, you’ll find the beans wrapped in a creamy white pulp with a delicious taste! These beans undergo a fermentation process for 4 to 6 days to develop their best aroma.

Next comes the drying stage : they are spread out under the sun for a few days. Once dried, the largest beans are carefully hand-selected and crushed to be transformed into cacao paste.

It is directly from this paste that we create our chocolate bars and our ceremonial cacao.

This fair trade certification safeguards farmers, valuing and respecting their work and the environment. It empowers them to continue working according to their own traditions.

Unlike most fair trade labels, this SPP label was established by the producers themselves to set their own production and trade standards. In this way, they have the security of selling their cacao at a fair and stable price, enabling them to live with dignity from their labour. They can continually enhance the quality of their products and their lives while developing beautiful projects.
